Cookie Crumble Ice Cream Cake

When I first saw how easy it was to make an ice cream cake I started to making them for all kinds of special occasions; birthdays,  family gatherings, bunco, and BBQ’s. When you see how easy they are to make you can start impressing your family and friends right away, even if you feel like you have no artistic talent.  So let’s get started!

You will need:

2 Quarts of ice cream (1 vanilla,  1 chocolate)

1 Package of Oreo cookies

1 Box cake mix or see my favorite chocolate cake recipe down below.

1 Large tub of Cool Whip

Few drops of food safe Peppermint essential oil

Directions:

Take a 9 inch spring form round pan (typically used for cheesecake) and add your vanilla ice cream smooth it out evenly in the pan then add your chocolate ice cream and smooth it out as well, then place in the freezer till you are ready for it.

Bake your cake in 2 – 9inch round cake pans according to the directions on the box.

Once your cakes have cooled you can now assemble your ice cream cake. I like to cut the tops off of my cake to make them flat. I layer mine: Cake, Ice Cream, Cake.

Now that you have the ice cream cake assembled, all you need to do it decorate it. You can start covering it with the Cool Whip or you can add a few drops of food safe Peppermint essential oil to it before you start covering your cake.

Once the cake is covered sprinkle cookie crumbles on the cake then freeze until you are ready to serve.

The first time I baked this cake was in 2nd grade and it was a BIG hit! Enjoy!

This recipe makes 2 9″ rounds

Ingredients:

2 Cups - Flour
1 3/4 Cups - Sugar
1/3 Tsp. - Baking Powder
1 3/4 Tsp. - Baking Soda
1 Tsp. -  Salt
2/3 Cup - Vegetable Oil
1/2 Cup - Cocoa powder
1 Cup - Water
1 Tsp. - Vanilla (optional)
3 eggs

Pour cake batter into a greased and floured pan

Bake 30-40 minutes at 350 degrees

For a square or oblong pan bake 35-40 minutes at 350 degrees.
